No, this would not work.
The way the Wii remotes work is there is an IR signal sent out of the remote, the Wiimote reads where's it's relatively location to the sensor. Then, through Bluetooth, the Wiimote tells the Wii it's coordanates. Other stuff is sent such as buttons pressed, controller number, Mii information, etc.

I'm not sure why you would need an IR pen for the Wii.
If you told me a little bit more about what you want to do, I'll be able to help you out.
I don't want to answer you without fully understanding the question.

Sorry crait, but you are completely wrong on this one...

Inside of the Wiimote there is essentially a camera, designed to just pick up IR light. The reason we need the IR sensor bar is the two sets of IR lights give something for the Wii remote's camera to track. It figures out its position relative to the lights being emitted and then sends that information via bluetooth to the Wii.

What you can do with this is make an IR sketchpad using nothing more than the Wii remote and an IR pen. As far as I know you only need something with an IR led at the end. That's why an IR pen is so easy to make. I haven't checked what you linked to, but if it's got an LED I'm sure it will work.
