Aux in? I am not sure. Just guessing. But also you would probably have to make one your self.

When you say "car dock" do you actually want a dock to stick your PSP in?
Or do you just want to connect your PSP to your car stereo?

Well it is possible to connect it to a car stereo if the car has an AUX input.
My uncles car has an standard head phone jack input where you can plug about any device into the jack and the audio will come out of the speakers. The cable is really standard so it shouldn't be hard to find in any electronics store.

I haven't heard of any commercial item like that, but there are probably some home made things out there.

I can tell you right now there is no product that will do that, and more than likely won't ever be. If you want complete car stereo integration (which is sounds like you do) iPod is the only way to go (unless there is a Zune supported deck out there). Even just getting an iPod dock for your car won't give you the control you just mentioned. It has to be a stereo that supports iPods and will have an actual iPod plug, not just a headphone jack for it.
Anyone who is THAT anti-mac is just ignorant. Believe me I'm PC all the way, but Apple does have good products, and even better marketing. Not to mention Apple products typically "just work." Look at your situation now. What you want is really only achieved through buying an Apple product...
