The next step is to work with a commercial food professional to convert the recipe to ratios and then check for stability and possibly other factors. I actually also love various organic foods, especially those made from fruits, I mean desserts :D . I recently went to a restaurant and tried their mango mango desserts! It's so delicious! Their service is top notch, you have to try it. they are based in the center of New York, a very convenient location, as for me.
