I'm going to say Legend of Zelda Twilight Princess, though only someone that has played at least 3 other games in the series will be able to appreciate it b/c the music is remastered/ altered but still keeps you on the edge of your seat because you recognize music from the other games.
Like advancing in Hyrule Castle and hearing Ganondorf's organ music from Ocarina of Time.

Final Fantasy X had some of the best composing work ever.
It's mix of symphonic brilliance and adventurous themes added to atmosphere especially during the cut scenes.
And hey, it had Ramstein in it so who's complaining?

I remember loving Metroid 2:Return of Samus.. The music after you get out of the ship. For whatever reason, I really liked it.
As far as up to date stuff..Hmmnn...Tony Hawk
