is there anything i can do to make my psp slim take up the entire screen on the TV instead of what it does by default?

Probably not, unless you can press triangle and that menu appears to change the screen mode.
It would distort the small psp screen too much to fit on a bigger tv.

Unless the games specifically are coded to take up more room, they won't.

Some homebrew are full screen.
