Some Final Fantasy games are good games. I think it's FF 3 that gives you the options to give your party "jobs" to level up so that you can specialize how you want to fight, which gives a lot of control for an RPG, especially older ones. The story is okay, game length is appropriate, and the game feels pretty personal.
There's also FF7, which I think is a good game, but people like that primarily because of the materia system and I think that's a pretty poorr reason to like a final fantasy game... especially since the "jobs" thing from FF3 or w/e one it is allows more customization than materia, but still it's "good".
I'd use Final Fantasy 9 as the best example of a solid Final Fantasy game. It has everything and delivers excellently. Good graphics, tons of content, a very involving storyline which makes you feel like you can relate to the characters, the perfect amount of "fantasy-like themes" without going crazy. It's just a great game. The artwork, dungeons, battle system etc. are all great and it even has a good card game.
